If you grow peppers in the garden and fertilize them properly, you can usually expect a rich harvest (reading tip: harvesting peppers - time and tips on harvesting presented). In itself this is of course a great thing, because what is delicious than freshly picked peppers from your own garden? Unfortunately, it can also happen that you harvest more peppers than you can eat. So of course it is useful to know how to process the peppers and make them so durable.
And this is exactly the catch: unfortunately, many do not know how to do this, and so they rot the beautiful peppers. To prevent this from happening to you, here are 4 different ways in which you can preserve the vegetables.
This is how you can preserve peppers
➤ Option 1 - insert peppers:
By placing the peppers in mason jars, you can keep the fruit in the cellar for a long time, for example. It is best to soak the peppers in vinegar. Below is a brief explanation of how this is done.
- 5 mason jars (1 liter capacity each)
- 4 kilograms of peppers
- 4 liters of water
- 2 cups of white wine vinegar
- 15 cloves of garlic
- 25 peppercorns
- 5 bay leaves
- 6 tablespoons of salt
How to do it:
To prepare four kilograms of bell pepper, you need to dissolve six tablespoons of salt in four liters of water by briefly bringing the water to a boil. Then remove the pot from the stove and pour two cups of the vinegar into the water.
Divide the washed, pitted and chopped peppers into five mason jars. Then put five peppercorns, three halved cloves of garlic, a bay leaf and some dill in each jar.
Now pour the water mixed with the vinegar and salt into the five glasses. There should be about half a centimeter of space at the edge. Then close the mason jars properly and place them in a water bath for two hours.
After the glasses have cooled sufficiently, you should keep them in a cool place. Here the peppers have to brew for at least two weeks before you can enjoy them.
➤ Option 2 - dry paprika:
You can not only insert peppers, but also dry them. You can do this in two ways.
➥ Air dry:
Under no circumstances should you dry the fruit in the sun, because UV radiation destroys a large part of the vitamins. You can only dry the pods in the shade if it is nice and warm and airy. Then simply use a needle to thread it onto a string and hang the chain outside.
➥ dry in the oven:
However, the quickest and easiest way is to use your oven to dry. To do this, simply split the pods, remove the seeds and, if you want, remove the skin. Then dry the peppers in the oven at a temperature of 50 degrees and then store them in screw-top jars. They keep for about half a year and you can then grind them to use as a spice. You can also put the pods in oil after drying and make them quasi antipasti.
➤ Option 3 - make paprika chutney yourself:
A chutney is a sweet and spicy jam that goes particularly well with hearty meat dishes such as Grilled meat fits. It can consist of both fruits and vegetables. Chutneys are also a great way to preserve fruit. In our case, however, we would now like to show you how you can make a very simple paprika chutney yourself.
- 300 grams of sugar
- 2 teaspoons of salt
- 1/2 teaspoon of chili powder
- 4 tablespoons of tomato paste
- 50 milliliters of red wine vinegar
- 500 grams of pepper cubes
- 100 grams of onion cubes
How to do it:
Melt the sugar in the pot and add the peppers and onion cubes. Simmer everything for 10 minutes and then add the remaining ingredients. Let everything simmer again for 10 minutes and then pour into glasses.
Depending on the type of pepper you use to make the chutney, it can taste a little sweeter, hotter or even more hearty.
➤ Option 4 - freeze peppers:
If you cannot process fresh fruits straight away, you can of course also freeze them. It is up to you whether you chop the fruit or freeze the whole pods. It is only important beforehand that you wash the pods thoroughly.
You can usually keep frozen peppers in the freezer for up to 10 months. But then you have to expect that they won't be as crisp anymore if you thaw them. By the way, you can preserve almost all vegetables and herbs in this way.
